Rice kheer / Rice Payasam
Preparation timing 35 minutes
Ingredients:
  • Milk - 1 ltr
  • Rice - 1/ 2 cup
  • Sugar - 1/2 cup
  • Cardamom - 3 to 4 crushed
  • Raisins - 10 to 15
  • Cashew nuts - 8 to 10
  • Pistachio and almond for garnishing
Direction:

  • Firstly put the rice in a bowl and wash it really well and soak it for about 10 minutes.
  • Heat a pan and add 1 ltr of milk to it and let the milk boil completely.
  • Once the milk is completely boiled reduce the flame to medium low.
  • Then add soaked rice and cook it by stirring occasionally.
  • Make sure milk and rice should not stick to the bottom.
  • When the rice is properly cooked then add 1/2 cup of sugar and keep stirring.
  • Because when we add sugar , soon it begin to stick to the bottom of the pan.
  • Further add crushed cardamom , cashew nuts and raisins. 
  • Cook till the milk is thicken.
  • Now rice kheer is ready.
  • Take a serving bowl pour the kheer with a ladle and garnish with almond and pistachio.
