Sooji Upma / Rava upma
Preparation timing 10 minutes
Ingredients:
  • Sooji - 1 cup
  • Onion - 1 medium size (finely chopped)
  • Green chilly - 2 slit
  • Ginger - 1inch
  • Carrot - 1 (chopped)
  • Beans - 50 gms ( finely chopped)
  • curry leaves - 6 to 7
  • Coriander leaves - 1 small bunch ( finely chopped)
  • Mustard seeds - 1 tsp
  • Cumin seeds - 1 tsp
  • Urad dall - 1/2 tsp
  • Channa dall - 1/2 tsp
  • Assafoetida - 1 pinch
  • Turmeric powder - 1/2 tsp
  • Red chilly powder - 1/2 tsp
  • Oil - 1 tbsp
  • Sugar - a pinch
  • Salt to taste
  • Water - 1 and 1/2 cups

Direction:


  • Firstly take a pan and add 1 cup of sooji to it.
  • Dry roast the sooji for 2 - 3 minutes or till sooji turns little golden.
  • Once the sooji is dry roasted keep it aside and let it cool.
  • Heat 1 tbsp of oil in a kadai and add mustard seeds,
  • Fry mustard seeds till splatter.
  • Then add cumin seeds , 1/2 tsp of urad dall , 1/2 tsp of channa dall. 
  • Fry till urad dall and channa dall turns golden in color.
  • Then 1 pinch of assafoetida,  curry leaves and chopped onion. Saute till onion become translucent.
  • Further add chopped green chilly and grated ginger. Saute it.
  • Now add finely chopped carrot and beans.
  • Additionally add turmeric powder , red chilly powder, salt and sugar.
  • Mix all the ingredients really well and cover it till vegetables nicely cooked.
  • Open the lid and check vegetables are properly cooked.
  • Then add 1 and 1/2 cups of water and allow the water to boil.
  • Mix the mixture with one hand and add the roasted sooji slowly into the mixture with the other hand.
  • After that cover the pan till sooji observe all the water.
  • Open the lit and add coriander leaves and mix it well.
  • Sooji upma is ready to be serve.

Kanda aloo Poha / Flattend rice
Preparation timing 25 - 30 minutes

Ingredients:
  • Poha / flattened rice - 2 cups
  • Mustard seed - 1 tsp
  • Cumin seeds - 1 tsp
  • Assafoetida - 1 pinch
  • Oil - 3 tbsp
  • Roasted peanuts - a hand full of
  • Ginger - 1 inch (grated)
  • Curry leaves - 8 -10
  • Onion - 2 medium size ( finely chopped)
  • Green chilly - 2 ( slit)
  • Turmeric powder - 1/2 tsp
  • Boiled potato - 1 diced ( optional)
  • Lemon juice - 2 tsp
  • Coriander leaves - 1 tbsp ( finely chopped)
  • Sugar - 1 tsp
  • Salt to taste
  Direction:
  • Firstly sieve the poha ( flattened rice) and remove small granules
  • Put the poha  in a strainer and pour a jug full of water over it. 
  • Immediately press the poha to drain excess water 
  • Sprinkle a pinch of salt and a pinch of sugar mix well and keep it aside
  • Heat  3 tbsp of oil in a pan then add mustard seeds , once the mustard seeds start splutter ad cumin seeds , curry leaves , green chilly and a pinch of assafoetida . fry for 15 seconds
  • Then add chopped onions and grated ginger saute it 
  • When the onions turn translucent  add diced boiled potato , turmeric powder, salt and a little water
  • Give it a stir and cover it for 2 minutes 
  • Then add roasted peanuts and mix well
  • Further add moist poha and mix it well
  • Cover the poha with a lid and  cook for a minute
  • Then add chopped coriander leaves and lime juice mix well
  • Now kanda poha is ready to serve

Sevai / Vermicelli upma

Preparation timing 25 minutes

Ingredients:
  • Sevai / vermicelli - 1 cups
  • Water -
    1 ½ 
    cups
  • Onion - 1 medium size onion ( finely chopped)
  • Green chilly - 1 ( finely chopped)
  • Ginger- 1 inch ( grated)
  • Carrot - 1 ( finely chopped)
  • French beans - 50 gms ( finely chopped)
  • Coriander leaves - 2tspn ( finely chopped)
  • Curry leaves - 4 -5 
  • Turmeric powder - 1/2 tsp
  • Red chilly powder - 1/2 tsp
  • Mustard seeds - 1tspn
  • Cumin seeds - 1 tspn
  • Urad dal - 1/2 tspn
  • Channa dal - 1/2 tspn
  • Asafoetida - 1/4 tspn
  • Peanuts - 2 tbsp
  •  Oil- 4 tspn
  • salt to taste 

Direction:

  • Firstly take a pan add 2 tspn of oil then add vermicelli / sevai and roast for 2 -3 minutes in low flame
  • When the colour of the vermicelli turned golden, keep it aside and let it cool
  • Now take a kadai heat 2 tspn of oil, 1/2 tspn of cumin seeds , 1/2 tspn of mustard seeds, 1/2 tsp of urad dal, 1/2 tsp of channa dal, assafoetida , curry leaves and peanuts.
  • Roast the peanuts untill chrunchy
  • Then add chopped onion and saute untill golden
  • Further add chopped green chilly , and grated ginger saute it for a while
  • Now add finely chopped carrot,finely chopped french beans and green peas saute it
  • And add  1/2 tsp of turmeric powder, 1/2 tsp of red chilly powder, and salt as well saute it
  •  Cover it till vegetables nicely cooked
  • Now add roasted vermicelli and mix well .
  • Further 
    1 ½ 
    cups of water and stir it well
  • Allow the water comes to boil.
  • Then cover the pan till the vermicelli observe all the water 
  • Open the lid and add chopped coriander leaves and mix it well 
  • Now your vermicelli upma is ready to serve
