Rabri ( Indian desert)
Preparation timing 30 minutes
Ingredients:
  • Milk - 1 liter 
  • Sugar - 4 tbsp ( to taste)
  • Cardamom powder - 1/2 tsp
  • Pistachio and cashew nuts for garnishing
  • Saffron - 3-4 strands (Optional)

Direction:


  • Heat the milk in a kadai or a pan on  medium flame
  • When the milk is completely boiled reduce the flame to low and stirring occaisonally until the milk reduce in half the quantity.
  • Further add sugar and keep stirring. Make sure that the spatula goes down till to the bottom otherwise milk will stick to the bottom
  • Additionally add  cardamom powder mix well and cook till 1/4 of the quantity. you can see the milk will  thick and the color is slightly brown.
  • Transfer the rabri to a bowl and let it cool to  room temperature
  • After that refrigerate the rabri for 2-3 hours
  • Garnish with some pistachio and cashew nuts
  • Rabri is ready to serve
