Rabri ( Indian desert)
Ingredients:
- Milk - 1 liter
- Sugar - 4 tbsp ( to taste)
- Cardamom powder - 1/2 tsp
- Pistachio and cashew nuts for garnishing
- Saffron - 3-4 strands (Optional)
Direction:
- Heat the milk in a kadai or a pan on medium flame
- When the milk is completely boiled reduce the flame to low and stirring occaisonally until the milk reduce in half the quantity.
- Further add sugar and keep stirring. Make sure that the spatula goes down till to the bottom otherwise milk will stick to the bottom
- Additionally add cardamom powder mix well and cook till 1/4 of the quantity. you can see the milk will thick and the color is slightly brown.
- Transfer the rabri to a bowl and let it cool to room temperature
- After that refrigerate the rabri for 2-3 hours
- Garnish with some pistachio and cashew nuts
- Rabri is ready to serve
